Low-Tech Production of Specialty Mushrooms on Wood-Based Substrates

Joe Krawczyk and his wife Mary Ellen Kozak have owned and operated Field and Forest Products, Inc. since 1983. Located on the edge of the known world in Peshtigo , WI , Field & Forest Products is a producer of specialty mushroom spawn and a supplier of mushroom growing equipment. All of their spawn products are USDA certified organic, as are the mushrooms they produce. Joe and Mary Ellen have authored the popular growing guide to shiitake cultivation "Growing Shiitake Mushrooms in a Continental Climate" and numerous other booklets and articles. Their expertise in mushroom cultivation has been shared with growers nationwide, and they have served as volunteer consultants to mushroom growers in Eastern Europe and southwest and central Asia . Mary Ellen is the president of the Shiitake Growers Association of WI and Joe has been on the board of directors since its inception in 1985.
